Dinner Entrees

Scalloped Potatoes
5 or 6 Idaho potatoes
Diced onion
Butter slices
Cubed Ham
1 can cream celery soup
¾ can milk
Season all
Garlic Powder
Cheese (I use 4 cheese blend, grated)
Crock Pot
Peel and slice potatoes, dice onions, cube ham, mix soup and milk together well.
Layer in crock pot: potatoes, onion, ham, butter slices (about 5 per layer), and sprinkle season all on each layer, until you have two layers and have used ½ ingredients.
Add ½ soup mix, layer two more layers and add rest of soup.
Cook on low most of the day. Add cheese about ½ hour before serving.
Mom's Spaghetti
1 pound sage pork sausage
Diced onion
Garlic
Italian spices
2 small cans tomato sauce or bits
1 small can tomato paste
Honey
Stove Top
Brown sausage in large sauce pan with onion, garlic, and Italian spices. Then drain some, not all of fat.
Add tomato sauce, paste, and honey. Simmer until low boil, add about 1 cup of grated cheese (I use 4 cheese blend) and some grated parmesan cheese.
Noodles take about 10 to 15 minutes to cook after water is boiling. I add a little vegetable oil to water in noodles to prevent noodles from sticking together.
Chipped Ham on Toast
4 Tablespoons butter
4 Tablespoons flour
2 cups milk
Season all
2 packages thinly sliced ham, cut up (I use Buddig's)

Stove Top
On medium heat, melt butter, add flour and mix well. Add milk and sprinkle season all in. Stir well with whisk until there are no lumps. Cook over medium heat until it thickens, add ham, and continue cooking until hot. (Around 5 to 10 minutes) Serve over toast.
Baked Pork Chops
Olive Oil (about 3 tablespoons)
Small onion, diced
Garlic powder
¼ teaspoon season all
¼ teaspoon pepper
Pork chops ( 4 - 6)
2 cans cream celery soup
Milk
350 F
Saute onions and garlic powder in Olive Oil, remove most from pan, brown chops in same skillet, mix soup with ½ can milk for each can of soup, onion mixture, salt and pepper. Place chops in baking dish, cover with soup mixture, cover tightly, and bake one half hour, or until hot.
Country Fried Steak
4 round or cubed steaks (I use cubed pork steaks)
1 cup buttermilk
1 ¾ cups flour, divided
½ tsp garlic powder
1 teaspoon salt
2 tablespoons vegetable oil
2 cups milk
½ teaspoon pepper
Stovetop and 350 F
Pour buttermilk into a bowl, and gently coat each piece of meat.
Combine 1 ½ cups flour, garlic powder, salt and pepper in ziplock bag. Take meat from buttermilk, place in bag and shake.
Heat oil in non stick skillet, brown meat on each side, place in baking sheet. (use medium heat)
Combine ¼ cup flour and 2 cups skim milk and pour into skillet, stirring to loosen flour stuck to the pan. Stir continuously until flour has thickened.
Pour over meat in baking dish, warm in oven 15 to 20 minutes.
Mom's Potato Lasagna
5 potatoes
1 cup parmesan cheese
2 cup mozzarella cheese
Chopped ham
Chopped bacon
2 cups white sauce
1 teaspoon nutmeg
Season-all
White Sauce:
4 tbsp butter
4 tbsp flour
2 cups milk
Stovetop
Spray baking dish. Peel and slice potatoes . Boil 10 minutes. Prepare white sauce. (Milk, butter and flour) and nutmeg to white sauce.
Layer baking dish with potatoes, white sauce, cheese, bacon, ham, cheese, white sauce. Repeat for 3 layers ending in cheese.
You can also add a layer of broccoli or other vegetable you like. For the cheese, I use 5 cheese Italian Creamy Melts by Kraft.
Bake 35 to 40 minutes at 350.
White Sauce: Heat butter in saucepan until butter melts. Whip in flour, add milk and whip until smooth. Heat until mixture thickens, stirring frequently.
