Sausage Gravy and Biscuits
½ pound sage sausage
4 Tablespoons butter
5 tablespoons flour
2 ¾ cups milk
½ teaspoon season all
Stove Top
Fry sausage, breaking into small pieces, drain fat.
Add butter, reduce stove heat to low - medium (I use 4).
While butter is melting, whip flour and milk together until there are no lumps. Pour over meat mixture, add season all and stir regularly until it simmers.
Stir constantly for two minutes, gravy should be thick. Serve over fresh baked southern biscuits.
Vegan Sausage Gravy and Biscuits
~2 Tbsp Avocado oil or other oil
14 oz Lightlife Gimme Lean Plan-Based Ground Sausage
4 Tablespoons Vegan Butter (Like Earth Balance)
5 tablespoons flour
2 ¾ cups Creamy/Full Fat Oat Milk (Like Oatly)
½ teaspoon season all (or to taste)
Stove Top
Fry sausage in oil, breaking into small pieces.
Add butter, reduce stove heat to low - medium.
While butter is melting, whip flour and milk together until there are no lumps. Pour over meat mixture, add season all and stir regularly until it simmers.
Stir constantly for two minutes or more, until gravy thickens. Serve over fresh baked biscuits, such as Annie's (vegan).
Skillet Potatoes
Chop 1.5 to 2 lbs potatoes of choice into bite-sized or half-inch pieces
Large Yellow Onion, diced
Butter
Olive Oil
Season All
Optional: Diced peppers
Stove Top - Medium to Medium High
Chop potatoes and onion. Add to bowl, and stir in olive oil until just coated, Seasonall, and some butter. Add peppers, etc if you want.
Pre-heat pan on medium-high, add a little oil to coat bottom, and pan fry until done. Adjust seasoning if needed.
Oven Variation:
Spread on baking sheet and bake on 425 degrees until done, stir once.
Egg Strata
9 eggs
9 Tablespoons milk
Salt
1 cup grated cheese (Mom uses 4 cheese blend)
1 pound bacon
1 cup bread crumbs with 2 tablespoons melted butter mixed in.
350 F
Beat together eggs, milk, and salt. Cook in skillet until moist, not quite done, and pour into greased baking dish.
Layer the remaining ingredients on top.
Bake 15 to 20 minutes, uncovered.
Egg Fondue
16 slices bread without crust, buttered on both sides
Sliced cheese to almost cover bread ( or grated, just a thin layer)
1 pound cubed ham or fried and crumpled bacon
3 ½ cups milk
6 eggs
Season all
Dry mustard spice (just a little)
350 F
Layer first three ingredients.
Mix together remaining ingredients. Beat well, pour over layers, cover and refrigerate overnight.
Bake 50 to 60 minutes until golden brown, and egg is done.

Scrambled tofu (if going vegan route)

Ground sausage or Lightlife Gimme Lean Plan-Based Ground Sausage

Green onions, sour cream, diced jalapenos, avocado
Burrito sized tortillas
Stove Top - Medium to Medium High
Warm the burritos on the stove before setting out.
Set up burrito bar so people can build their own.
Bagel, Egg, and Cheese
Everything bagel or English muffin
2 Eggs
Cheese of choice
Butter
Stove Top - Medium to Medium High
Cook eggs over hard, medium, easy, or to taste. Add cheese when you flip your eggs (optional).
Toast the bagel or English muffin, and spread with butter.
Load eggs with cheese into bagel or English muffin.
I often serve each bagel or English muffin half open faced with one egg on each.
French Toast
Good, high quality bread
1 egg per two pieces of bread
Non-dairy milk or dairy milk
Cinnamon
Nutmeg
Salt
Earth Balance or butter
Stove Top - Medium
Heat pan over medium with butter.
Whisk the egg, milk, spices, and salt in a bowl. The flatter the better.
Generously dip the bread and coat both sides.
When the pan is heated, place french toast. Flip when the first side is golden brown. Cook other side until golden brown.
Replace butter between each batch. I normally fit two slices in the pan at once.
Cassie's Scrambled Eggs
Two eggs per person plus 1 for every 2 to 3 people
Creamy full-fat oat milk (Like Oatly)
Salt to taste
Vegan butter (like Earth Balance)
Stove Top - Medium
Whisk the eggs, milk, and salt until well-whisked and foamy.
Pre-heat pan over medium and melt butter. Shift pan to spread melted butter across the bottom and up the sides some.
Pour egg mixture into hot pan and watch for eggs to start to set up. Use long motions with the back of the spatula to push up set up eggs and allow liquid eggs to take their place. Continually repeat until eggs look almost set up and turn off pan. Eggs should be fluffy and perfectly cooked, and not overcooked.
