BBQ Hamburgers

  • 2 pounds ground beef

  • 2 cups ketchup

  • ½ cup honey

  • 4 teaspoons wore sauce

  • 4 tablespoons vinegar

  • Season all

  • Minced onion

  • 2 teaspoons nutmeg

Crock pot or 250 F

Mix and simmer all ingredients, except hamburger. Fry hamburger in small thin burgers until brown, simmer in oven two hours covered, or in crock pot. This is great made the day ahead, just reheat in oven.

BBQ Ribs

  • 2- 3 pounds spare ribs (I use boneless beef ribs)

  • Medium onion, sliced

  • Worcestershire sauce

  • Season all

  • Garlic powder

  • BBQ sauce (I use Kraft Honey)

275 F

One the evening prior, place ribs in a flat container, cover with onion slices, Worcestershire sauce, season all, and garlic powder. Cover and shake. Shake in the morning. Either place in crock pot in the morning on low, or in the oven and cook for 2 hours. When they are tender, remove from oven, and grill on medium heat, covering with BBQ sauce on both sides.

Teriyaki Steak

  • Steak, cut about 1 ¼ to 1 ½ inches thick, bottom round or sirloin

  • ¾ cup Teriyaki marinade or sauce

  • 1 tablespoon minced ginger

Grilled

Mix sauce and Ginger, marinate steak in sealed container, shaking several times, at least 6 hours or overnight.

Place steak on medium grill, grill 18 to 20 minutes, turning at least once.

Mom's Poor Man Lasagna

  • 1 ½ pounds ground beef

  • Italian spices

  • Garlic powder

  • Diced onion

  • Box Macaroni and Cheese

  • 1 can tomato sauce

  • 1 can tomato paste

  • Grated cheese (I use 4 cheese mix)

Stove Top

Brown meat with spices and onion, drain. While meat is cooking, boil noodles from box of Macaroni and Cheese, and drain.

When meat is browned, add tomato sauce and paste, cheese from M and C box, and a little water. Stir thoroughly. Add noodles, mix, top with a little grated cheese if you want.

Aunt Karen's Lasagna

  • Spaghetti sauce with sausage and ground beef (divided in four)

  • 9 Lasagna noodles, cooked to soft, but not done (3 per layer)

  • 16 ounce tub Ricotta Cheese (divided in two for first two layers)

  • 2 pound bag Mozzarella Cheese ( divided in three)

  • 1 pound grated Parmesan Cheese ( divided in three)

350 F

In a large baking pan, layer one and two: Spaghetti Sauce, 3 noodles, spread Ricotta on noodles, sprinkle Mozzarella, and Parmesan on top. Go light on the Parmesan as it has a stronger flavor.

Layer three: Sauce, noodles, sauce, Mozzarella, Parmesan.

Cover with tin foil, tenting tin foil so cheese does not stick to it while baking. Bake for 1 hour 15 minutes, remove tin foil and bake another 15 minutes until cheese is golden brown and bubbly. Let sit 10 minutes prior to cutting.

Grandma Kreye's Roast Beef

  • For the roast:

    • Start with a nice roast, 2 - 3 pounds. I use chuck or sirloin tip roast, slightly mottled, with as little grizzle as possible. (Mottled gives it it's flavor.)

    • Place in roasting pan or crock pot. Sprinkle envelope of regular dry onion soup mix over the top.

    • Cook at 250 F for 2 to 2 ½ hours, then 300 F for 30 to 45 minutes, then up to 350 F for last half hour.

    • Keep covered. If it is not browning, uncover last 10 minutes.

Crock Pot or 250 F

  • For the Gravy:

    • Take juices left over, heat on stove top. Mix cold water ( about I cup) and cornstarch (couple of forkfuls, until water is almost white) until there are no lumps.

    • Pour into juices until medium brown, stir. Add a little Kitchen Bouquet seasoning (about ½ cap) and stir. If it does not thicken, add a little more of the starch mixture. (Stir mixture first.)

  • Leftovers = Pulled Beef Sandwiches

    • Warm meat, cut into small pieces, removing fat. Pour BBQ sauce over so it just covers meat and mix. Warm over medium heat until hot. Sometimes I add a little honey and nutmeg for extra flavor.

Supper on a Bread Slice

  • 1 ½ pounds ground beef

  • 1 small can evaporated milk

  • ½ cup cracker crumbs

  • 3 teaspoons season all

  • 1 egg

  • ¼ cup onion, diced

  • 1 Tablespoon mustard

  • 2 cups grated Velveeta cheese

  • Hamburger buns

350 F

Mix well, spread on open face of hamburger buns, Bake 15 - 20 minutes.

Mom's Meatloaf

  • 1 ½ pounds ground beef

  • ¾ cup bread crumbs or oatmeal (uncooked)

  • ½ cup diced onion

  • ½ cup catsup

  • ¼ cup mustard

  • 1 large egg

  • 2 tablespoons Worcestershire sauce

  • 2 teaspoons garlic powder

  • ¾ teaspoon season all

350 F

Combine ingredients in large bowl thoroughly. Shape into loaf pan, and bake 50 to 55 minutes until juices show no color, and center is not pink. Let stand 5 minutes before cutting. Makes 6 servings.

Ground Beef and Potato Meal

  • 1 1/2 lbs ground beef

  • 1 clove garlic

  • 1/4 teaspoon pepper

  • 1/2 teaspoon thyme

  • 6 medium potatoes

  • 2 large onions

  • 1 (10 3/4 ounce) can cream of celery soup

  • 1/2 cup water

Crock Pot

Cook ground beef and garlic in pan until lightly browned. Stir in pepper and thyme.

Peel and slice the potatoes and onions. Put 1/2 potatoes and onions into a buttered crock pot.

Add browned beef and top with remaining potatoes and onions.

6. Mix soup with water and spread over top of contents. Cover. Cook on low for 8 to 10 hours or on high for 3 to 4 hours.

Hamburger Stroganoff

  • Package of egg noodles

  • 1 pound ground beef

  • 1 medium onion diced (about½ cup)

  • ¼ cup butter

  • 2 Tablespoons flour

  • 1 teaspoon season all

  • 1 teaspoon garlic

  • 1 can cream chicken soup

  • 1 cup sour cream

Stove Top

Brown ground beef with onion and butter in large skillet.

Stir in flour and spices. Cook over medium heat, stirring constantly for five minutes.

Stir in cream of chicken soup. Heat to boiling, stirring constantly. Reduce heat to low, simmer uncovered for 10 minutes, and add sour cream.

Cook long enough to heat through, serve over hot egg noodles. The egg noodles take about the same amount of time as the stroganoff, so begin heating the water when you start the stroganoff. Add the noodles to the hot water after you add the soup to the stroganoff, and it should be timed pretty close.

Variation: If l have a fair amount of left over roast. I cut the roast into small bite size pieces, and use that instead of the ground beef.

Tater Tot Bake

  • 3/4 to 1 pound ground beef or turkey

  • 1 small onion, chopped

  • Salt and pepper to taste

  • 1 package (16 ounces) frozen Tater Tots

  • 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted

  • 2/3 cup 2% milk or water

  • 1 cup shredded cheddar cheese

350 F

Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Season with salt and pepper.

Transfer to a greased 2-qt. baking dish. Top with Tater Tots. Combine soup and milk; pour over potatoes. Sprinkle with cheese. Bake, uncovered, 30-40 minutes or until heated through.

Mom's advice: In most recipes, the tots are the second layer, with the soup and cheese layer over them. I put the tots on top so they are crispy, add more cheese, sometimes add a layer of vegetables over meat. If I have leftover chicken or turkey I use that for the meat layer...
